Grilled Asparagus with Lemon Pepper Seasoning



Quick and easy, and you can say, "Hey, Ma !! I had my veggies today !!" :-)

What You Need
  • Asparagus Stalks, preferably on the thicker side; CostCo has thick stalks from time to time
  • Olive Oil
  • Lemon Pepper Seasoning
  • Basting Brush
Preparation and Cooking
  • Break off the bottom part of each stalk by locating the softest point; keep the top part.
  • Brush olive oil on all the stalks.
  • Place the stalks on the grill, then shake the lemon pepper seasoning on them.
  • Cover and cook just long enough to get them warm but retaining crispness; anywhere from six to 10 to 15 minutes, depending on how strong the grill.

Marinated Tiger Prawn Shrimp




This is relatively quick and easy, and became a favorite last year.

What You Need
  • Tiger Prawn Shrimp; I purchase them at CostCo
  • House Seafood Sauce - Japanese Style, from Ashman Manufacturing; available at Wegman's
  • Skewers (optional)
Preparation and Cooking
  • Place the shrimp in a colander and rinse in cold water; pat dry. Leave the shells on.
  • Put the shrimp in a Ziploc bag and add the marinade; let sit for at least 30 minutes (I go two hours).
  • Prepare skewers, if applicable, as needed.
  • Place on the grill, flipping at least once, until the shrimp starts to turn pink; usually, the shell starts opening.
  • Slide shrimp off the skewers (if applicable) into a serving dish for everyone to enjoy.

The First Post - Where to Begin??

OK, so how to best begin my tailgating blog ... :-)

Here it is the middle of June which means football season is right around the corner. With that comes another season of tailgating which is just as fun as the game itself, if not more.

Over the few years of having tickets, I've had friends visit my tailgate and others who I don't know. But I welcome them all because we share the same passion for the Burgundy and Gold, as well as my passion for grilling and cooking.

In the posts to follow will be recipes that my fellow tailgaters and I have enjoyed. Whether you use each recipe straight out or tweak it here and there, I hope you find it useful for your tailgate cookout.
